Mineral-Balancing Cilantro, Celery, and Tahini Dressing

Maintaining an optimal intake of essential minerals is imperative to helping the body stay vital. This tasty dressing combines micronutrient-dense tahini, celery, and cilantro to balance the body’s minerals and provide the essential resources it needs for healthy bones.

Ingredients

1 cup roughly chopped celery
4 green onions or 1 shallot
2 Tbs apple cider vinegar
1 clove garlic (or more if you like garlic)
1/2 cup raw sesame tahini
1/3 cup extra virgin olive oil
Juice of one lemon
2 Tbs Braggs/tamari
3 Tbs cilantro, chopped
1 Tbs ginger, grated or roughly chopped
1/2 cup water

Intructions

Blend all ingredients for several minutes until smooth. Serve over fresh greens, steamed carrots, on a sandwich, or as pasta sauce. Covered in the refrigerator, it will keep for 2–3 days.
